Grapes: Raboso Piave.
Background: Raboso, an indigenous black grape variety typical of the Treviso area. It has very ancient origins: it has in fact been cultivated in Eastern Veneto for around 3000 years. The name Raboso recalls the adjective “rabioso”, a dialect term used to describe a fruit which is still a little unripe and therefore a little astringent. In the past, when a
child, the custom of saving the Raboso produced that year for the day of his wedding. Malanotte was the name of a family of Venetian nobles who knew enhance the production of this wine.
Alcohol: 15-17.5% vol. (depending on the vintage).
Organoleptic characteristics: intense ruby red color with reflections garnets. Full and broad bouquet, reminiscent of blackberries and cherry jam, the melted chocolate and tobacco. Strong taste, dry and austere flavour, with a light acidity basic. Excellent extract, exuberant alcoholic quality.
Gastronomic pairing: ideal with game (hare, pheasant or guinea fowl), salmì or with peverada sauce), grilled meats, mature cheeses.
